Cooking: The Simplest Beef Stew in Tomato Sauce with Beans

Beef Stew – Aside from the shortened working hours during Ramadan here in Dubai, delicious Iftars and so on, one thing that Non-Muslims like us are looking forward to every year, are grocery sales.
Big supermarkets like Union-Coop, Spinneys, WestZone, Carrefour etc, never miss a year without having big price drops on their grocery items.
Last weekend, right after the entrance, a huge pile of canned goods greeted us at Carrefour Oasis Center branch on Sheikh Zayed Road. I was tempted to pick up one regular size of canned white beans.
While checking other items, I already had in mind what to cook for dinner, Beef Stew. Below are the rest of the ingredients I bought (mostly with reduced prices).
Ingredients:
- Beef Chunks/Shanks with bone and marrow (1kg)
- Ready to eat Baked Beans in can with tomato sauce (415g)
- Tomato Paste (135g)
- Tomato Sauce (420g)
- Salt (to taste)
- Pepper (to taste)
- Capsicum (1 piece, cubed)
- Carrots (1 piece, cubed)
- Garlic (5 cloves, peeled and pounded)
- Onion bulb (1 medium size and sliced)
- Cooking Oil
- Water
Procedure:
In a cooking pot, boil 3 cups of water
Put in the beef chunks/shanks with bone and marrow (pre-seasoned with good amount of salt and pepper)
5 minutes after it starts to boil, pour the water out (this is to do away with the unnecessary strong beef smell) and set aside.
Put back the cooking pot to the hotplate/burner (in medium heat), put little cooking oil enough to sauté and caramelize the garlic and onion
Put back the boiled beef, when brown, add 1 cup of water; this time (in high heat)
Add the desired amount of salt and pepper then give it a good mix
Keep it boiling until the meat gets tender
Add the tomato paste, tomato sauce, carrots and give it another boiling time for 5 minutes (put to medium heat)
Add the ready to eat baked beans, the capsicum, let it simmer for a while, then serve hot
